Creamy Garlic Pasta with Shrimp & Vegetables

Creamy Garlic Pasta with Shrimp & Vegetables

Prep time- 15 minutes

Cook time- 20 minutes

Ready in- 35 minutes

Yields- 8 cups

 

Ingredients-

  • 6 ounces of whole wheat spaghetti
  • 1 bunch- asparagus
  • 12 ounces- raw shrimp
  • 1 large- red bell pepper
  • 1 cup- frozen peas
  • 3 cloves garlic
  • 1 cup- yogurt
  • ¼ cup parsley
  • 3 tablespoons- lemon juice
  • I tablespoon olive oil
  • ¼ cup- roasted pine nuts
  • 1/2 teaspoon pepper

 

Instructions-

  • Boil the spaghetti.
  • Add shrimp, bell pepper, peas and asparagus.
  • Mash the salt and pasta to form a paste.
  • Whisk lemon juice, pepper, oil, parsley and yogurt.
  • Add pasta.
  • Sprinkle with pine nuts.
